For The Love of Pizza

When my son was growing up, Fridays were always Pizza Night.

It’s a tradition that has remained to this day – although I have to admit, I often forgo a gluten-free pizza in lieu of a healthier option.

(Besides, gluten-free pizza isn’t always that easy to come by on a moment’s notice, unless you have a supply of gluten-free pizza crusts in your freezer at all times).

Just saying.

Which is why, on a recent Friday, I was suddenly inspired to cook up a storm.

My plan was to make several things, including vegetarian Beet Burgers from an enticing recipe I’d recently come across, and a homemade Broccoli Soup.

While I was at it, I also planned to roast some Sweet Potatoes to have on hand for a snack or side dish.

Mid-afternoon, I met a friend for coffee, for what I expected to be a one hour visit – tops.

But we hadn’t seen each other in awhile, and before we knew it one hour had turned into three!

By the time I got home, I was feeling a bit less inspired.

Have you ever had days like that?

When, despite the best laid plans, things don’t turn out quite as expected?

Aside from the afternoon coffee klatch, here’s how my plans continued to fall apart:

1.  I’d forgotten to cook the beets earlier in the day – a critical first step for making the burgers

2 . I’d also forgotten to take the previously made chicken broth out of the freezer for the soup!

Dinner was starting to look meager.

That’s when I started poking around the freezer to see if there was anything else I could eat in a pinch.

There was a box of frozen Sunshine Burgers (a blend of sunflower seeds and rice), which I knew had been sitting there for several months – probably left over from last summer.

I decided this would have to do.

Fortunately, there was still time to peel and chop the sweet potatoes and pop them in the oven to roast.

I sautéed some greens to eat alongside – despite my ambitious plans, that was dinner.

Truth be told, it wasn’t exactly my best culinary creation.

Yet, we all have days like this, right?

When we’re left wondering what the heck to eat, opening cupboards and the fridge aimlessly, trying to find a solution.

Add being gluten-free, or dairy-free to the mix – or any combination of food sensitivities – and it gets so much more complicated!

And that brings me back to the Friday tradition of pizza night.

Since picking up the phone to order a pizza is never an option, in the end it would have been so much easier if I’d just whipped up one of these and called it a day!

 

SOCCA  (Bread, Pizza Base, or Crepe – a 3-in-1 Recipe)

1 – 2 ½ cups Garbanzo Flour  (amounts vary between recipes)

½ tsp Sea Salt

½ tsp ground Pepper

1 ¼ warm Water

3 Tbsp Olive Oil

 

Combine the ingredients in a bowl & whisk until combined. Let rest for at least 30 minutes or longer.

Meanwhile, preheat the oven to 450 degrees and place an oven proof pan, or pizza stone in the oven to warm up.

When ready, add a teaspoon or so of oil to the pan, followed by a ladleful of batter. Swirl the batter around to coat the pan. Return the hot pan to the oven for 7-8 minutes.

Top with your favorite ingredients & enjoy!

Note:  The amounts tend to vary from one recipe to the next, as far as the proportion of flour to water. I experimented a bit for this post, and found this particular recipe for Socca to be ideal. It wasn’t quite as heavy (more like a crepe or tortilla) plus it didn’t dry out quite as fast – a big plus in my book!
