A Gluten-Free Cookie is Still A Cookie

TrufflesThe holidays are in full swing, no question about it.

And with that comes temptations galore, as you fend off one sweet, gluten-filled treat after another.

But do the holidays – or any special occasion for that matter – really mean you have to forego everything that’s sweet and tasty?

Of course not!

There are hundreds of blogs and cookbooks available to you, filled with mouth-watering, delicious recipes that cater to your special diet – be it gluten-free, vegan, or something in between.

So perhaps the bigger question is this:

Can a cookie – or any sweet treat – still be part of a ‘healthy- aging’ lifestyle?

And my answer is “Yes, absolutely!”

However, there is a caveat.

Are Your Genes Talking to You?

WheatDid you know that your genes are constantly talking to you?

Not only that, you’re also talking to your genes through every choice you make, and every decision.

Especially when it comes to diet and lifestyle!

How’s that even possible?

Truth is, you can’t change the genes that you were born with.

However, you do have the ability to control how your genes are “expressed”.

What does that mean?

Throughout a typical day, the foods you choose to eat, the amount of sleep or exercise you get and any number of things that you might be exposed to, are signaling to your genes.

They’re having a conversation.

And these signals, or triggers, are either turning your genes “on” – or “off”.

But what does this have to do with the health of your gut, not to mention your sensitivity to gluten and other foods?

The New Rules for “Gluten-Free” Food Labels

gluten free stampThe long-awaited FDA food labeling rules – specific to gluten-free products – went into effect earlier this week!

That’s right – as of August 5, 2014, any packaged food that claims to be gluten-free, must conform to these new regulations.

What does that mean to you?

On the one hand, it will probably make life a lot easier. (Especially as you navigate your grocery store).

On the other hand, it can also come with its own set of problems.

In a nutshell, here’s what you need to be aware of:

 

20 PPM – The New Guideline

Any packaged food that is labeled “gluten-free” must contain 20 ppm (parts per million) – or less – of gluten. In other words, a food can actually contain gluten and still be considered safe to consume.

In truth, this has always been the case.

What is different now, is that the FDA has placed a very stringent cap on the acceptable amount.

 

Why 20 PPM?

The 20 ppm guideline was settled on, because the available research, while limited, indicated that most people with Celiac Disease could tolerate gluten in very small amounts.

Is There A Frat Party In Your Gut?

Teen girl with bellyacheTruth be told, while I’ve been to a number of Frat Parties in my day, I never actually drank the beer.

That’s because I never acquired a taste for it – not even to this day.

(As you can imagine, I was the life of the party.)

Perhaps this was my body’s way of telling me that gluten wasn’t my friend – long before I knew the first thing about Celiac Disease or gluten-sensitivity.

As you likely know, Frat parties have a reputation for being a bit on the wild side, with lots of drinking and misbehavior.

So, what does a Frat Party in your gut look like?

The key word, here, is “misbehavior”.

Hitting the Road

Cargo OverloadI’ve just wrapped up a ten-day vacation in Eastern Washington.

The great thing about a road trip, in my humble opinion, is that you can take everything you need with you – without having to deal with limits on excess baggage, or airport security.

For anyone who has Celiac Disease, or is dealing with food allergies, this makes a road trip ideal.

For the simple reason, you can bring everything along, relying on local grocery stores to stock up on fresh produce and whatever else you might need.

Of course, it also means you may not exactly be traveling light.

In fact, if you’re like me, the words “travel light” might not be in your DNA.

But that’s exactly what makes a road trip so ideal!

For our annual escape, we always stay at the same place – a comfortable time-share condo that is ours for exactly one week.

When we arrive it is always sparkling clean, and tastefully furnished – and that includes a well-stocked kitchen.

Even though the condo comes with a fully equipped kitchen, in the last couple of years, I’ve started bringing more and more of my own equipment.

Perhaps you can relate.

The big concern here, is cross-contamination.

Going Gluten-Free? Don’t Make This Mistake!

PackagesDo you know what most people do, once they receive a diagnosis for Celiac Disease – or it’s better known cousin, Non-Celiac-Gluten-Sensitivity?

They go shopping, of course.

And that’s perfectly understandable.

For most of us, the first inclination is to purchase suitable replacements for everything we’re used to eating.

Things that include:

  • Bread
  • Crackers
  • Cookies
  • Cereal

 After all, a girls gotta eat, right?

Then again, a number of people have been known to go into a sort of hibernation – dreading that first trip to the market.

Instead, they focus on foods that are naturally gluten-free – things like nuts and seeds, all manner of fruits and vegetables, dairy (if permitted), eggs (again, if permitted), meat and poultry, legumes and a few safe grains.

Let’s Chew On This

Bread CrustDid your grandmother (or a parent) ever admonish you to adequately chew your food?

(In my husband’s family, his grandmother had a hard and fast rule to chew each bite exactly 33 times).

Well, it turns out your grandmother was right!

Chewing your food thoroughly is a critical part of the digestive process, priming your stomach and your digestive juices for the task ahead.

Not only that, this entry point – i.e. your mouth – is also where the Gut-Brain connection happens.

Translation – your gut and your brain are so closely connected, that the gut is often referred to as your “second brain”.

In fact, proper chewing does all of the following for your body:

  • Helps to eliminate gas and bloating (gluten sensitivity, anyone?)
  • Helps to eliminate abdominal pain
  • Helps to reduce the load on the rest of your digestive system
  • Actually helps with weight loss!

 

Are you curious about the last one?

Properly chewing your food can actually help with weight loss (and weight maintenance) simply because you’ll end up feeling satisfied on less food!

Do You Have a Leaky Gut?

In fact, for most of us the first time you heard those words, you probably recoiled in horror.

“Leaky gut? No way – not me!”

Well, guess what?

The very fact that you have Celiac Disease, non-Celiac gluten-sensitivity or multiple food sensitivities means you probably do.

It’s actually that simple.

And it’s also very common.

The medical term for leaky gut is “intestinal permeability”.

What that means, quite simply, is that over-sized molecules of undigested food particles are leaking through your gut wall into the bloodstream – wreaking havoc along the way.

(And the reason why, is because those all-important villi that line the digestive tract, aren’t able to do their job).

Of course, this is when you immune system kicks into overdrive,  in an effort to vanquish the unwelcome intruder.

An important note, here:  this does not mean that your immune system has gone haywire – quite the contrary.

In fact, it’s the job of your Immune System to protect you from anything that doesn’t belong in your body.

So in that sense, it’s simply doing what it’s designed to do.

Happy Mother’s Day!

Mother's Day SmallMy most pressing concern with the upcoming Mother’s Day weekend is the huge focus on Mother’s Day Brunch.

The challenge, whether you are dining at a restaurant or someone’s home, is always – what to eat?

When you rule out Gluten, Dairy and Eggs there isn’t a whole lot left. (It’s fairly common, by the way, for someone who has Celiac Disease to be intolerant to Dairy as well).

So, I posed the question to the group and got lots of feedback, everything from a fruit tray with a creamy dip to chicken kebabs.

The key take-away?

If you’ve been invited to a Mother’s Day Brunch this year – be sure to bring food that YOU can eat.

This is one of those times you need to think of yourself first.

Actually, this rule applies whenever you are invited to a meal at someone’s home, or anytime you’re not sure what the offerings might be.

Because – not only are you special but you deserve the extra attention!

In honor of Mother’s Day, I decided to share with you a recipe for Bobotie. (Pronounced bow-bootie).

This is a delicious, meat-based casserole that I first encountered years ago when I was a guest at someone else’s home.

In fact, I thought it was so delicious, I asked for the recipe on the spot, something I don’t often do.

This would be a great addition to any buffet, whether a Brunch or potluck. Just be sure to use Gluten-Free bread and you’ll be good to go.

What Is Your Headache Telling You?

Could your headache be related to what you are eating?

As you may have guessed, the short answer to that question is – yes. And it isn’t just your headache, either – any aches or pains you’re experiencing throughout your body, could easily be related to your diet.

Case in point – not too long ago, I tweaked my back, prompting a call to my chiropractor.

I had no idea what I’d done to cause this, but I knew he would set me right again.

During the exam, he asked me “What did you eat the day before?”

“Seriously?” I thought. (I was both surprised and mystified by the question).

A few years ago, I might have scoffed at the mere suggestion of a connection between my diet and a persistent pain in my back.

But if my journey over the past few years has taught me anything, it’s that everything in our body is so closely interconnected, that what might seem implausible on the surface, is often worth a closer look.

In other words, more often than not – our diets really are the culprit behind our physical symptoms.

(Often setting you back several months, in your quest to quell the inflammation in your body, and ultimately feel human again).

Of course, several days had gone by prior to my visit with the chiropractor, and I really wasn’t sure what I’d eaten.

He was very specific, though.

Had I perhaps ingested some gluten? Dairy?
