For The Love of Pizza

When my son was growing up, Fridays were always Pizza Night.

It’s a tradition that has remained to this day – although I have to admit, I often forgo a gluten-free pizza in lieu of a healthier option.

(Besides, gluten-free pizza isn’t always that easy to come by on a moment’s notice, unless you have a supply of gluten-free pizza crusts in your freezer at all times).

Just saying.

Which is why, on a recent Friday, I was suddenly inspired to cook up a storm.

My plan was to make several things, including vegetarian Beet Burgers from an enticing recipe I’d recently come across, and a homemade Broccoli Soup.

While I was at it, I also planned to roast some Sweet Potatoes to have on hand for a snack or side dish.

Mid-afternoon, I met a friend for coffee, for what I expected to be a one hour visit – tops.

But we hadn’t seen each other in awhile, and before we knew it one hour had turned into three!

By the time I got home, I was feeling a bit less inspired.

Happy Valentine’s Day

Just in time for Valentine’s Day, I’m adding another recipe to the files – in case you’re still scrambling to come up with some gluten-free sweets for your sweetie.

Or, you didn’t see the Chocolate Truffles recipe I shared earlier this week.

My good friend Janelle Holden, posted this recipe during the recent holidays, in her blog Mind Body Love – and it’s a perfect cut-out cookie, regardless of the occasion.

In fact, I think that’s the best part about this recipe!

The dough lends itself well to rolling out, and cutting into decorative shapes with your choice of cookie cutter.

I also like that the recipe uses garbanzo bean flour  –  a common ingredient in Middle Eastern baking.

(Ethnic cuisines are often a fabulous source for new ideas).

What 5 Favorite Foods Would You Bring To The Moon?

I came across this question the other day, and it got me thinking.

If you were indeed to take a trip to the moon – or were stranded on a deserted isle – which 5 foods would be on your list of ‘must haves’?

Of course, there’s no cheating allowed, not even on the moon.

Meaning whichever 5 foods you choose, they must also be gluten-free as well as free of any other allergens you normally avoid.

So, here’s my list:

  • Quinoa
  • Blueberries
  • Hummus
  • Avocados
  • Salmon

Yes, I know.

That almost sounds a bit too healthy.

But that’s how I live my life. No matter where I travel, I like to be well-fed in a healthy sort of way.

However, if push came to shove, I would also include a supply of Beanitos Chips (gotta have something fun, right?)

Oh wait, that makes 6 items.

Oh well, I can’t think of a single item I would leave out.

Blueberries are full of antioxidants.

Salmon provides Omega-3’s.

Quinoa is an excellent source of protein. The cooked grain is wonderful for breakfast – topped with nuts or fruit – but also fills in as the perfect side dish along with Salmon, or even a vegetarian entrée.

A lot of people have a love-hate relationship with Quinoa.

For starters, they’re not even sure of the correct pronunciation. (Try “keen-wa”)
